Method

  • Chop the onion and boil in a pan of water with the lentils for 15 minutes.
  • Finely chop all nuts or put in blender.
  • In a bowl, add the chopped nuts, lentils, tomatoes, oats and crumbled stock cube and season to taste.
  • If the mixture is very dry, add a dash of boiling water to mix to a firm "stodge".
  • Press mixture into a greased loaf tin and cook for at least 45 minutes at 200 C/400 F/Gas 6 until solid and browned.
  • Ingredients

    • ½ Onion
    • 200g (8 oz) Cooked chestnuts (vacuum packed or bottled)
    • 100g (4 oz) Walnuts or cashew nuts
    • 100g (4 oz) Red lentils
    • ½ large tin chopped tomatoes
    • 25g (1 oz) Rolled oats
    • 1 Vegetable stock cube
    •  Pepper to taste
