Method

  • Cut the peeled potatoes into quarters.

  • Par boil the potatoes until just starting to soften, then drain and leave to cool for 15 minutes.

  • Heat your goose fat in a hot oven (around gas7-8)

  • Tip your potatoes into the hot oil, make sure they are all covered well in the fat. Cook for around 30 minutes, until they are all crispy.



  • Ingredients

    • 1kg Desirée Potatoes
    • 4oz Goose fat
    • Salt to taste
