Method

  • 1) Heat the splash of oil in a saucepan and add the thyme, nutmeg, onion and garlic. Cook until the ingredients become soft

  • 2) Add the celery and leek and continue to cook for another 5 minutes

  • 3) Add the remaining vegetables and the stock, and cook for a further 15 minutes, until the vegetabnles are tender

  • 4) Using a blender, process the vegetable soup until the mixuture is smooth. Season with salt and pepper and serve
  • Ingredients

    • Splash sunflower oil (or olive)
    • ½ bag fresh thyme pulled off the stalk (or dried if no fresh)
    • 2 pinches nutmeg
    • 1 onion (red or brown) finely chopped
    • 1 clove garlic finely crushed
    • 1 stick celery finely sliced
    • 1 leek finely sliced
    • 3 baby turnips peeled and roughly chopped
    • 1 medium parsnip chopped
    • 3 carrots chopped into rounds
    • 1 potato (medium) roughly chopped
    • 2 pints (1.2 litres) vegetable stock / Bouillon
    • pinch salt
    • pinch pepper
