Root Vegetable Winter Warmer Soup
Method
Ingredients
- Splash sunflower oil (or olive)
- ½ bag fresh thyme pulled off the stalk (or dried if no fresh)
- 2 pinches nutmeg
- 1 onion (red or brown) finely chopped
- 1 clove garlic finely crushed
- 1 stick celery finely sliced
- 1 leek finely sliced
- 3 baby turnips peeled and roughly chopped
- 1 medium parsnip chopped
- 3 carrots chopped into rounds
- 1 potato (medium) roughly chopped
- 2 pints (1.2 litres) vegetable stock / Bouillon
- pinch salt
- pinch pepper
