Method

  • Place water in a small bowl and sprinkle the gelatine on top. Dissolve by stirring over a pan of hot water. Allow to cool. Meanwhile whisk all the remaining ingredients except the fruit until absolutely smooth. Beat the cooled gelatine into the cheese mixture until completely incorporated. Pour into a wetted 1.1 litre (2 pint) ring mould and place in the fridge for two hours to set. To serve briefly dip the mould in hot water to loosen the sides of the ring and then invert onto the serving plate. Fill the centre with your chosen fruit.

    • 45 ml  (3 tbsps) water
    • 11.7 g  sachet of gelatine
    • 395 g  can of condensed milk
    • 250 g (9 oz) curd cheese
    • 75 ml (5 tbsps) fresh lemon juice
    • 15 ml  (1 tbsp) fresh lime juice
    • 1 tsp  finely grated lemon zest
    • 1 tsp  finely grated lime zest
    • 300 ml  (1/2 pint) soured cream
    • Selection of  seasonal fruit prepared
    •  Whipped cream to serve
