Method

  • Preheat oven to Gas mark 5.

  • 1- Place your paper cases in baking tin (great for a little helper to do). In a mixing bowl beat the butter and sugar until fluffy. You can use an electric whisk or a wooden spoon.

  • 2- Add beaten egg, whisking well.

  • 3- Add half the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined.

  • 4- Spoon equally into the cases and bake for 12 minutes or until risen and golden on top.

  • Allow to cool for ten minutes on a rack before icing.

  • Mix up the icing, following instructions as per the box, adding a couple of drops of food colouring. We made blue icing for superman cakes. Then top with your selection of sprinkles. Great fun for young cooks!

    • I am surprised and disappointed that anyone could claim Fairy Cakes as an American cuisine. I first made fairy cakes 40+ years ago for my eldest son .....my mother having made them for me as a child. Fairy Cakes are as English as me .... Americans make a great deal of fuss about 'cup cakes' but they are a mere copy of our English fairy cake. Jenh.

    • 125g Butter - softened
    • 125g Caster sugar
    • 2 Free range eggs - beaten
    • 125g Self-raising flour
    • 2tbs Milk
    • 6tbs Icing Sugar
    • few drops Cool water
    • couple drops Food colouring of choice
    • couple spoons Sprinkles/decorations
