Prawns in Tasty Cream Sauce

Ingredients

  • c 600g Large prawns (fresh or frozen)
  • 2-3 sticks Celery
  • 1 large clove Garlic
  • Knob Butter
  • 2 teaspoons Sesame oil
  • 3 teaspoons French mustard
  • pprox ½ a glass Medium/dry Sherry (white wine will do)
  • Approx 5 floz Double cream
  • Generous handful Fresh Coriander

Method

Chop celery and garlic. Heat butter with sesame oil in casserole dish and when hot add celery and garlic and fry for a minute or 2 before adding prawns for another minute. Add sherry and mustard and bring to boil. Add the cream, season with black pepper and stir in most of the coriander keeping a bit back to sprinkle over the top.(If you use frozen prawns and they give off alot of water then you may need to thicken the sauce with a little cornflour.)
