Method

  • Place all ingredients in your serving bowl and coat well with olive oil and lemon juice. Leave to marinade for 30 minutes, then serve!

  • Lovely with grilled lamb and crusty white bread. Also tastes good the next day, so fine to prep in advance.
  • Ingredients

    • 1 Red pepper - sliced
    • 1 tin Butterbeans
    • 1 Sweet onion- finely sliced
    • 4 Ripe tomatoes- quartered
    • Small handfull Dill - chopped
    • Large handfull Parsley - chopped
    • ½ Lemon - juice of
    • Good glug Olive oil
    • To taste Salt Pepper
