1. Marinade the chicken in the lemon juice for 20 minutes.
2. Soak the creamed coconut in 2 tablespoons of hot water, until smooth.
3. Put the coconut cream, chilli sauce, salt sugar, lemon grass and onion into the food processor and work until a smooth paste.
4. Heat 1 tablespoon of oil in a frying pan and fry the paste, stirring for 5 minutes.
5. Add the chicken to the pan and fry for 5 minutes.
6. Stir in the water.
7. Return to the boil and then simmer for 30 minutes or until the chicken is tender and the sauce is thick.
