Herby Meat Loaf with Onion Sauce

Method

  • 1. Preheat the oven to 150c/300f/Gas mark 2. Lightly grease and line a 2lb loaf tin
  • 2. Dry-fry half the chopped onion until soft, add the beef and continue cooking for 3-4 minutes
  • 3. Add the breadcrumbs, garlic, paprika, tomato puree, herbs and mix well.
  • 4. Remove from the heat and stir in the egg
  • 5. Spoon the mixture into the loaf tim=n and place the loaf tin in a roasting tin, cover with foil and place in the oven for 1-1½ hours.
  • 6. Meanwhile, dry-fry the remaining onion until soft
  • 7. Pour in the milk and bring to the boil. Mix the cornflour with a little water and whisk into the sauce with the mustard.
  • 8. Simmer until thickened and season to taste
  • 9. Serve the meatloaf with the onion sauce, potatoes and seasonal vegetables.

    • 2 Onions Finely Chopped
    • 1lb/450g Lean minced Beef
    • 75g/3oz Fresh Breadcrumbs
    • 1 Clove Garlic Crushed
    • 1 tsp Paprika
    • 4 tbsp Tomato Puree
    • 2 tbsp Chopped Fresh Herbs (rosemary thyme oregano parsley)
    • 1 Egg Beaten
    • 1-1½ tbsp Cornflour
    • 1 tbsp Dijon Mustard
    •  Salt and freshly ground Pepper
    • 300ml/ ½ pint Skimmed Milk
