White Wine and Caper Sauce

Method

  • Finely chop the onion. Pour the white wine into a saucepan and add the onion. Bring to the boil and simmer until reduced by half.

  • Add the cream, season and reduce by half again.

  • Pass through a fine sieve.

  • Rinse the capers and add to the sauce. Simmer for 5 minutes and then add the cold butter in small cubers to emulsify.

  • Heat gently for a further 5 minutes and then it will be ready to serve.
  • Ingredients

    • 1 Onion
    • 100ml Double Cream
    • 300ml Dry White Wine
    • 30g Cold Butter
    • 30g Capers
    • To Taste Salt and Pepper

    This goes with my Pan Seared Tuna Recipe. It is a simple suace however rated excellent by a michelin star chef when I cooked it on Rosemary Shrager's School for Cooks.
