Quick & Easy Cauliflower Cheese

Method

  • Remove all of the florets from the cauliflower. Boil a large saucepan of salted water and once at rolling boil remove from heat. Add cauliflower florets and leave to stand for 15 minutes. Then drain.

  • To make the sauce, melt the butter in a saucepan. Add the flour and stir in. Cook for about one minute then gradually add the milk. Once the flour and butter has gone into the milk bring just to boiling point. The sauce will thicken rapidly. At this point turn the heat off and add the cream. Stir in then add 200g of the cheese (grated).

  • Stir and bring the sauce together. Place the cauliflower in a suitable dish and pour over the sauce. Grate the rest of the cheese over the top and sprinkle with a little paprika and salt & pepper.

  • Place under a medium grill and leave there for 10 to 15 minutes or until the top has gone golden.

  • Serve immediately.

    • 1 Cauliflower
    • 50g Butter
    • 2 tbsp Plain Flour
    • ½ pint Milk
    • 100ml Double Cream
    • 300g Good Quality Chedder Cheese
    • Pinch Paprika
    • To Season Salt Pepper

    I cook this for my son and to accompany sunday roasts. It's great and cheesy!
