Vegetable Frittata

  • This is a perfect quick meal when you are in a hurry or think you've got nothing to cook - you can normally find everything in the cupboard or freezer. Easy!

    Ingredients

    • 4 Eggs - freerange
    • tbs Olive Oil
    • 2 medium Cooked potato - chopped
    • ½ Onion - chopped
    • ½ Red/green pepper - sliced
    • Few spoons Frozen peas/sweetcorn
    • slice Ham - chopped /optional
    • to taste Seasoning

    Method

    • Heat the oil in a frying pan and add the potato and onion, fry for a couple of mins, then add the pepper.

      2- While that is cooking, whisk your eggs in a bowl and add any seasoning you choose.

      3- Add your peas, sweetcorn and ham to the pan, cook for 2 mins.

      4 - Add the egg to the pan and leave to cook for couple mins, keeping an eye on the mixture. Gently move the corners, so that the raw egg mixture flows into the space you've created.

      5 - Place the frying pan under a hot grill and cook the top of the frittata for a couple of minutes, keeping an eye on it so that it doesn't burn.

      When set, you are ready to go. Enjoy!
