Ratatouille Rice Risotto

Method

  • Cook the rice according to the instructions - I usually add 2 pints of water for 400g and leave the rice cooking until it's soft, even if all the water hasn't been absorbed (you drain away any remaining water when the rice is ready).

  • You could prepare your own ratatouille, but I prefer to buy pre-prepared packets, usually Marks & Spencer's own. Follow the instructions to heat the packets and mix into the rice, once the rice has finished cooking.

  • I add grated cheddar and mix thoroughly before serving, although some may prefer to serve the risotto with the cheese on the side.

  • 400g serves 4 people generously as a main course. I usually serve this with garlic bread and/or a green salad to make a very filling and satisying meal.

    • 2 packets Ratatouille
    •  Cheddar
