Iced Oysters with Lemon, Champagne and Tobasco

Method

  • Crush the ice and place on a large serving plate or bowl. Lay the seaweed (available from good fishmongers) onto the ice and arrange the oysters on top.

  • Mix the juice of 1 lemon, the champagne and tobasco and season. Drizzle onto the oysters and serve immediately.
  • Ingredients

    • 20 Fresh Oysters
    • 1 Lemon
    • 500g Ice
    • 200g Seaweed
    • 2 tsp Tobasco
    • To season Salt and Pepper
    • 100ml Champagne
