Pork and Sausage Cassoulet

Method

  • 1. Preheat the oven to 180c / 350f / Gas Mark 4
  • 2. Grill the sausages and place in a casserole dish.
  • 3. Mix together the pork, beans, onions, potatoes, tomatoes and add to the casserole dish. Season well with salt and black pepper.
  • 4. Dissolve the mustard in the stock and pour over the casserole contents. Cover and cook in the oven for 1 1/2 hours until the pork is tender.
  • 5. When cooked, remove the lid and sprinkle the breadcrumbs on top of the casserole mixture.
  • 6. Return the casserole to the oven for a further 30 minutes until golden brown.
  • Ingredients

    • 1 Large Onion roughly chopped
    • 1 tsp Mustard powder
    • 100g / 4oz Fresh Breadcrumbs
    • 450g / 1lb Low-fat sausages
    • 450g / 1lb Lean Pork cut into cubes
    • 1 can / 400g White haricot beans
    • 450g / 1lb Potatoes peeled and cut into pieces
    • 1 can / 400g Chopped Tomatoes
    • 150ml / ¼ pint Beef stock
    •  Freshly ground black pepper

    Cassoulet is generally a meal in itself, consisting of pieces of meat and sausage in a white bean stock thickened with breadcrumbs. Serve with green vegetables and crusty bread.
