Pork and Sausage Cassoulet
Ingredients
- 1 Large Onion roughly chopped
- 1 tsp Mustard powder
- 100g / 4oz Fresh Breadcrumbs
- 450g / 1lb Low-fat sausages
- 450g / 1lb Lean Pork cut into cubes
- 1 can / 400g White haricot beans
- 450g / 1lb Potatoes peeled and cut into pieces
- 1 can / 400g Chopped Tomatoes
- 150ml / ¼ pint Beef stock
- Freshly ground black pepper
Method
- 1. Preheat the oven to 180c / 350f / Gas Mark 4
2. Grill the sausages and place in a casserole dish.
3. Mix together the pork, beans, onions, potatoes, tomatoes and add to the casserole dish. Season well with salt and black pepper.
4. Dissolve the mustard in the stock and pour over the casserole contents. Cover and cook in the oven for 1 1/2 hours until the pork is tender.
5. When cooked, remove the lid and sprinkle the breadcrumbs on top of the casserole mixture.
6. Return the casserole to the oven for a further 30 minutes until golden brown.

Cassoulet is generally a meal in itself, consisting of pieces of meat and sausage in a white bean stock thickened with breadcrumbs. Serve with green vegetables and crusty bread.
