1. Lightly grease two baking sheets and set aside.
2. Put the flours together in a bowl, then add the ginger and mix well.
3. Put the butter, sugar and honey in a saucepan and heat gently, stirring, until the sugar has dissolved.
4. Add the melted mixture to the flour and mix well. Leave to stand for 20 minutes.
5. Knead the dough on a lightly floured surface and roll out to 0.5 cm thick.
6. Cut out circles using a 5cm cutter. Re-roll and cut the trimmings to make a total of 25-30 biscuits.
7. Alternatively, divide up the mixture, roll into small balls and flatten well.
8. Place the biscuits on the prepared baking sheets and bake in a pre-heated oven at 180c/350f/Gas mark 4 for 12-15 minutes or until pale golden brown.
9. Leave the biscuits to cool for a few minutes on the baking sheets, then transfer to a wire rack and leave until they are cold and have hardened.
