Method

  • 1. Lightly grease two baking sheets and set aside.
  • 2. Put the flours together in a bowl, then add the ginger and mix well.
  • 3. Put the butter, sugar and honey in a saucepan and heat gently, stirring, until the sugar has dissolved.
  • 4. Add the melted mixture to the flour and mix well. Leave to stand for 20 minutes.
  • 5. Knead the dough on a lightly floured surface and roll out to 0.5 cm thick.
  • 6. Cut out circles using a 5cm cutter. Re-roll and cut the trimmings to make a total of 25-30 biscuits.
  • 7. Alternatively, divide up the mixture, roll into small balls and flatten well.
  • 8. Place the biscuits on the prepared baking sheets and bake in a pre-heated oven at 180c/350f/Gas mark 4 for 12-15 minutes or until pale golden brown.
  • 9. Leave the biscuits to cool for a few minutes on the baking sheets, then transfer to a wire rack and leave until they are cold and have hardened.

    • 90g / 3 ½ oz Self-raising wholemeal flour
    • 90g / 3 ½ oz Plain wholemeal flour
    • 1 tbsp Ground Ginger
    • 65g / 2 ½ oz Butter
    • 25g / 1 oz Sugar
    • 65ml / 2 ½ fl oz Clear honey
