Method

  • Soak peas and barley overnight.

  • Dice all veg except potato. Cut Potato into larger chunks.
  • Rinse peas and barley, fill pot 3/4 full with water (you will need a large pot, I use a pressure cooker pot) Add stock cubes and all veg. Bring to the boil then simmer until veg is tender. Season to taste with salt and pepper.

  • Serve with crusty bread.

    • 250g Dried Marrowfat Peas
    • 250g Pearl Barley
    • 1 Medium Carrot
    • 1 Leek
    • 1 Medium Onion
    • 2 Sticks Celery (optional)
    • 1 large Potato
    • 2 Beef Stock Cubes
