Method

  • This is a great recipe for using up tomatoes, but can be just as tasty with a jar of passatta or a tin of chopped tomatoes in place of the fresh tomatoes.

  • Cut onion, carrot, celery, tomatoes, doesn't need to be neat as it will be getting whizzed up at end anyway.

  • Heat large sauce pan up with tablespoon of oil or butter in it. Add veg and cook for minute or so.

  • Add tomato puree and cook for few more minutes.

  • Add stock, salt and pepper and sugar, cook for about half an hour or until the vegetables are tender.

  • Whizz the whole lot in food processor or hand held blender and add more stock if it is a bit thick.

    • Yeah left out the celery as i didn;t have any tonight, tasted just the same! And i would deseed tomatoes if using fresh ones...I had to sieve it.

    • I am making tis right now. I asked a cookery teacher at work for a tom soup recipe and she she said to avoid making it, but this is so simple and smells great. I'm going to strain it, if it is grainy.

    • I don't deseed them, but i usually use fresh tomoatoes only if i have loads left over...i normally use tinned tomatoes for this recipe.

    • I have made this soup 3 times it is very easy to do. I skin the tomatos and I have added extra carrots and left out the celery. The taste is really nice and the soup is all so low in calories if you are watching your weight.

    Ingredients

    • about 8-10 normal sized tomatoes (or tinned tomatoes or passatta)
    • 1 onion
    • 1 large carrot
    • 1 stalk celery
    • 1 tbls tomato puree
    • 2 cubes dissolved in about 400 ml water chicken or vegetable stock cubes
    • 1 tbls sugar
    •  salt and pepper
