Easy Sweet and Sour Whatever

Method

  • If using fresh uncooked chicken or pork then chop and fry off first, leave to side.

  • In sauce pan add garlic, ginger,the vinegar, sugar, tomato puree, soy sauce, chopped pinapple and its juice and stock. simmer for 10-15 minutes or until thickened slightly. Add peppers and corn.

  • Add chicken back in.

  • Taste and add more vinegar/sugar/stock/salt and pepper as needed.

  • Serve with boiled rice.
  • Ingredients

    • 3-4 breasts chicken
    • 1 red pepper
    • 1 small tin pinapple slices in juice
    • optional baby corn
    • 100ml rice wine vinegar
    • 60-70g sugar
    • 1-2 tbsp tomato puree
    • 1-2 cloves garlic
    • 1 inch fresh ginger finely chopped
    • 1 tbsp soy sauce
    • 50-100ml stock (chicken or veg)
    • to taste salt and pepper
