Pasta Bake with Fishy

  • I topped this fish pie with cheese insted of potato. My kids're not big fish eaters, but like this they love it.

    Ingredients

    • 100g smoked haddock skin-and boneless
    • 150g cod fillet skin-and boneless
    • 85g mozzarella cheese
    • 30g cheddar cheese
    • 85g macaroni
    • 3 tsp. olive oil
    • 1 egg
    • 1 small onion finely chopped
    • 1 small celery stick finely chopped
    • 1 small handful spinach leaves
    • 1 carrot finely chopped
    • 120 ml full cream milk
    • 2 tbsp. double cream
    • ½ tsp mustard
    • 1 tbsp. fresh parsley finely chopped
    • 1 tsp. lemon juice

    Method

    • 1. Preheat oven. Cook the pasta, drain well, toss
      in oil.
      2. Boil the egg for 8-10 min. and then cool it.
      3. Heat the oil in a frying pan. Add onion and
      saute for 5 min., then add celery and carrot
      and saute for 3 min. Add spinach and cook for
      further 2 min., until tender.
      4. Stir in milk and cream and bring to the boil.
      Turn off the heat and stir in cheddar cheese
      , mustard, parsley and lemon juice.
      5. Place the fish in a small ovenproof dish. Spoon
      the egg over the fish, then top with the sauce.
      Put the pasta over the top and sprinkle with
      the mozzarella cheese. Bake for 20-25 min.
