Pasta Bake with Fishy

Ingredients
- 100g smoked haddock skin-and boneless
- 150g cod fillet skin-and boneless
- 85g mozzarella cheese
- 30g cheddar cheese
- 85g macaroni
- 3 tsp. olive oil
- 1 egg
- 1 small onion finely chopped
- 1 small celery stick finely chopped
- 1 small handful spinach leaves
- 1 carrot finely chopped
- 120 ml full cream milk
- 2 tbsp. double cream
- ½ tsp mustard
- 1 tbsp. fresh parsley finely chopped
- 1 tsp. lemon juice
Method
- 1. Preheat oven. Cook the pasta, drain well, toss
in oil.
2. Boil the egg for 8-10 min. and then cool it.
3. Heat the oil in a frying pan. Add onion and
saute for 5 min., then add celery and carrot
and saute for 3 min. Add spinach and cook for
further 2 min., until tender.
4. Stir in milk and cream and bring to the boil.
Turn off the heat and stir in cheddar cheese
, mustard, parsley and lemon juice.
5. Place the fish in a small ovenproof dish. Spoon
the egg over the fish, then top with the sauce.
Put the pasta over the top and sprinkle with
the mozzarella cheese. Bake for 20-25 min.

I topped this fish pie with cheese insted of potato. My kids're not big fish eaters, but like this they love it.
