Sweet Lamb For Ramadan

Method

  • 1.Cut lamb into 2-3 in pieces. Soak prunes in water for 1-2 hours and remove pits. Peel and core the pear and cut into wedges.
  • 2.Melt butter in a pan over low heat and add the lamb. Sauté over low heat for 10 minutes.
  • 3.Add cinnamon, water and sugar and mix well.
  • 4.Increase heat to mod and cook for approx 45-90 minutes or till the lamb is tender to a fork. The sauce will become darker.
  • 5.Drain prunes and add them to the lamb with the raisins, almonds and pear.
  • 6.Simmer for a further 15 minutes, remove the pan from heat and stir in the orange blossom water.

    • 32 oz lamb
    • 24 prunes
    • 2 pears
    • 6 cups water
    • ½ cup sugar
    • 3/8 cup butter
    • ¼ cup orange blossom water
    • ¼ cup raisin
    • ¼ cup whole almond
    • 1 tsp. ground cinnamon
