Rhubarb Marmalade a la D Senior

Method

  • Dice the rhubarb. Using a nutmeg grater grate the lemon rind. Mix the rhubarb, lemon rind and sugar together. Leave standing overnight. The next morning add the juice from the lemon and bring to a rolling boil. The mixture should start to thicken in 10 to 15 minutes. Pot immediately in warm sterilised jars then allow to cool slowly.

    • 1 lb rhubarb
    • 1 lemon
    • 2 1/2 cups sugar
    • 3 to 4  6 oz jars sterilised
