Add 3 teaspoons of Bipins Machi or Bipin's Methi masala* (you can get this from Bipins.co.uk) to 600g of fresh scallops, gently cook for 6-7 mins on medium on low heat in a little light olive oil with cracked black pepper and a pinch of salt. Garnish with a generous helping of freshly chopped coriander, little zest and finish with a good squeeze of lemon. Serve on a bed of green salad leaves accompanied by a warm ciabatta bread to mop up the zesty aromatic broth. Delicious! *If you can get hold of Bipins Machi Masala try using a 2-3 cloves of garlic, 2 green chilli, little bit of quality freshly ground garam masala powder.
