In a saucepan, place the margarine, sugar, water, fruit and soda and spice and bring to a slow boil. Allow the mixture to cool for about 30minutes. The fruit will swell making the cake more juicy and full of fruit. Stir in the eggs and they fold in the flours. Spoon the mixture into a 8inch cake tin which has been base and sides lined with greaseproof paper. Bake at Gas 4 for 1 1/4 hours. Great as a christmas cake and keeps for ages.
