Easy Meringues - Halloween Ghosts

Method

  • 1. Heat the oven to 140C (gas mark 1). Line two baking trays with greaseproof paper.

  • 2. Place the egg whites and a pinch of salt in your bowl and whisk with an electric mixer. Whisk on a low speed for 1 minute, then increase the speed to medium and whisk for another 2-3 minutes, or until the egg whites form stiff peaks.

  • If you lift the whisk attachment out of the bowl, the mixture should look fluffy and form peaks.

  • 3. Continue to whisk whilst gradually adding the sugar a tablespoon at a time, until the mixture is stiff and glossy - this could take 5-10 minutes.

  • 4. If using a spoon, scoop the mixture and place shapes on to the prepared baking trays. If you are using icing bags, use the appropriate size nozzle to create smooth round shapes on the baking tray.

  • 5. Bake for 30-40 minutes, or until the meringues are pale and dry. Turn off the oven and allow the meringues to cool in the oven with the door slightly ajar.

  • 6. If decorating, allow to cool completely and you can then make them look like little ghosts by adding black eyes and a mouth. Easy and great fun for the kids to get involved in.

    I often make these at Halloween for my children to decorate into ghosts! You need a piping bag to make these really smooth, but just use a spoon if you don't mind them a bit rough!
