Method

  • Cook chopped onions in butter till clear.Add curry powder.
  • Cook Pumpkin in chicken stock. Put in food processor and blend till smooth.
  • Add orange juice, salt and pepper to taste.
  • Add sour cream before serving.
  • Can replace pumpkin with kumara - sweet potato. Freezes well - up to a month.

    • How is it best to prepare the pumpkin for this soup - can it be cut into pieces and then put in the oven to roast with a little olive oil til soft and then added to saucepan or does it have to be put in uncooked ?

    • 2 Onions
    • 1 tblsp Orange Juice
    • 1 tsp Curry Powder
