Ingredients

  • 2 1bs Pumpkin
  • 3 sachets or 2 tblsp Chicken Stock
  • 3 oz Butter
  • 2 Onions
  • 1 tblsp Orange Juice
  • 1 tsp Curry Powder

Method

Cook chopped onions in butter till clear.Add curry powder.
Cook Pumpkin in chicken stock. Put in food processor and blend till smooth.
Add orange juice, salt and pepper to taste.
Add sour cream before serving.
Can replace pumpkin with kumara - sweet potato. Freezes well - up to a month.

How is it best to prepare the pumpkin for this soup - can it be cut into pieces and then put in the oven to roast with a little olive oil til soft and then added to saucepan or does it have to be put in uncooked ?
