Soul Cake
Ingredients
- ¾ cup butter
- ¾ cup caster sugar
- 4 cups plain flour sifted
- 3 egg yolks
- 1 tsp. mixed spice
- 1 tsp. allspice
- 3 tbsp. currants
- ------ milk
Method
- 1.Cream the butter and sugar together until pale in colour and fluffy in texture.
2. Beat in the egg yolks.
3. Fold in the sifted flour and spices.
4. Stir in the currants.
5. Add enough milk to make a soft dough.
6. Form into flat cakes and mark each top with a cross.
7. Bake on a well-greased baking tray in a hot oven until golden
