Method

  • 1.Cream the butter and sugar together until pale in colour and fluffy in texture.
  • 2. Beat in the egg yolks.
  • 3. Fold in the sifted flour and spices.
  • 4. Stir in the currants.
  • 5. Add enough milk to make a soft dough.
  • 6. Form into flat cakes and mark each top with a cross.
  • 7. Bake on a well-greased baking tray in a hot oven until golden

    • ¾ cup butter
    • ¾ cup caster sugar
    • 4 cups plain flour sifted
    • 3 egg yolks
    • 1 tsp. mixed spice
    • 1 tsp. allspice
    • 3 tbsp. currants
    • ------ milk
