Hallowe'en Soup

Method

  • 1) Chop up the potatoes and parsnips into small chunks / quarters, and boil them in some (slightly salted) water, until the potato starts to 'disintegrate'. Now drain, mash and leave to one side

  • 2) Steam the leeks, onion and garlic together. When the leeks begin to soften, add the spinach until cooked

  • 3) Using a blender / liquidiser, blend the entire mix together until smooth

  • 4) Pour back into a saucepan and reheat to serve

  • 5) Seasoning with salt and pepper to taste

    • 180g Spinach
    • 2 Large Leeks
    • 500g Potatoes
    • 1 Large Brown Onion
    • 2 Cloves Garlic
    • 2 Large Parsnips
    • 2 Pints Vegetable Stock
    • Pinch Salt (optional)
    • Pinch Pepper (optional)
