1) Chop up the potatoes and parsnips into small chunks / quarters, and boil them in some (slightly salted) water, until the potato starts to 'disintegrate'. Now drain, mash and leave to one side
2) Steam the leeks, onion and garlic together. When the leeks begin to soften, add the spinach until cooked
3) Using a blender / liquidiser, blend the entire mix together until smooth
