The Basics

Ingredients

  • 1 lb Butter
  • teaspoon cinnamon
  • packet Saltanas
  • some Apricot jam
  • 1 teaspoon Cornflour
  • a few drops vanilla Essence
  • a pinch Salt
  • 2 teaspoons Baking powder
  • 8oz Castor sugar
  • 5 cups Plain flour
  • 2 Egg yolks
  • 3 Whole eggs
  • few teaspoons sugar

Method

1. Cream butter and sugar
2. Add whole eggs and yolks - one at a time then add salt, vanilla, flour,baking powder and cornflour.
3.Roll out the dough in long rectangular sections and layer with apricot jam spread smoothly followed by sprinkly softened saltanas and then sprinkle on some cinnamon and sugar
4.Roll the dough 2 or 3 times and then cut into sections off the long sausage looking roll and bake on a baking tray at 375 degrees (gas mark 5) for about 10 minutes or until golden brown

She had this huge square table that she would clear and we would roll out the dough together and then shmear it with apricot jam and raisins – the best part was that she let me roll up the stuffed monkeys into a massive “tube” and then she sliced it into little biscuits. Granny Essie was my first cooking influence and my partner in crime for eating ice-cream.
