Method

  • 1) Line a baking tray with parchment paper and set aside

  • 2) Melt the chocolate over bowl over a pan of simmering water, once melted remove from the heat.

  • 3) Stir in the marshmallows, nuts and apricots, until all ingredients are well covered.

  • 4) Place heaped spoons of the mixture onto the baking tray, or spoon into mini sweet cup cases and leave to chill in the fridge until set.

  • 5) Remove from the fridge and enjoy, or store for up to 2 wks in a cool dry place. Alternatively you can group a few of the sweets together and bag up in shop bought cellophane bags as gifts.
  • Tips

    • You could try using a good plain or dark chocolate to suit your flavour, or even white chocolate. You could also use any other nut you prefer, I myself like using macadamias or pistachios. The best thing is, it's a recipe that could evolve into almost anything you desire, or have in your cupboard.

    • 125g/4oz milk chocolate
    • 50g/2½ oz mini marshmallows
    • 25g/1 oz chopped walnuts
    • 25g/1 oz no-soak apricots
