Method

  • Preheat oven to 180c/Gas 4.
  • Syrup: Bring the water and sugar to boil and simmer for about 5 mins before adding lemon juice. Continue simmering for a further 3 minutes. Allow to cool.

  • Cake: Beat eggs and sugar together. Mix in the oil and yoghurt. Fold in the rest of the ingredients. Place in a greased baking tray (8 x 10 or similar size). Bake for 25 - 30 mins.
  • Pour the syrup over the cake and chill before serving.
  • Tips

    • Add some almonds on top of the cake, or top with whipped cream.

    • CAKE MIXTURE
    • 1 cup semolina
    • 3 eggs
    • ½ cup caster sugar
    • 1 cup plain yoghurt
    • ½ cup vegetable oil
    • 3 tbs plain flour
    • 1 tbs vanilla essence
    • ½ tsp baking soda
    • 1 tbs baking powder
    • ½ tsp salt
    • 1 tbs grated lemon zest
    •  
    • SYRUP
    • 1 ½ cups caster sugar
    • 1 ½ cups water
    • 4tbs lemon juice
