Syrup: Bring the water and sugar to boil and simmer for about 5 mins before adding lemon juice. Continue simmering for a further 3 minutes. Allow to cool.
Cake: Beat eggs and sugar together. Mix in the oil and yoghurt. Fold in the rest of the ingredients. Place in a greased baking tray (8 x 10 or similar size). Bake for 25 - 30 mins.
Pour the syrup over the cake and chill before serving.
Tips
Add some almonds on top of the cake, or top with whipped cream.
This was taught to me by a Cypriot friend when I was in my teens (many moons ago)hence the weights being in cups. Not exactly healthy, but if you have a sweet tooth read on....
