Method

  • 1) Use a large frying pan to saute the onion until lightly browned (if you like, add the garlic - optional - and the red pimento - also optional)

  • 2) Grate the tomatoes on the largest holes of a grater - and mix them into the onion, covering the mix, and cooking it over a low heat for 25 minutes

  • 3) Remove the cover and break the eggs over the surface - stirring them gently to break the yolks

  • 4) Cover the lot and cook for about 3-4 minutes until the eggs are set

  • 5) Sprinkle with salt and pepper, and eat with some fresh, crusty bread

  • DELICIOUS!

    • 1 large finely chopped Onion
    • 4 Eggs
    • Splash Olive / cooking oil
    • 6 medium Tomatoes
    • As desired to taste Salt
    • As desired to taste Pepper
    • 1 clove crushed Garlic
    • 3-4 slices (optional) Red pimento
