Method

  • Start boiling the water for your pasta and add pasta when it ready and cook until 'al dente'. Conchiglie and Farfalle are best with this recipe.


  • Put a frying pan or skillet on a medium heat with a little oil, and warm.

  • With a sharp knife, remove the skin from the sausages and crumble the meat into the frying pan. The better quality the sausages, the better.

  • After a few minutes, add the wine, cream, basil and chilli flakes. Stir in and keep stirring. All told the meat won't need ten minutes on a medium or low heat.

  • When the pasta's cooked, drain and mix together. Serve up with another glass of white wine.

    • Good sprinkle of Chilli flakes
