The Basics

Ingredients

  • 2 cups Flour
  • Fresh or Frozen Blueberries
  • 1 large ripe Banana
  • ½ tsp Vanilla Essence
  • 2 Eggs
  • ½ cup + rind Orange
  • ½ cup Milk
  • 50 grams Butter
  • ½ cup Caster Sugar
  • ¼ tsp Baking Soda
  • 2 tsp Baking Powder
  • 3 Tbsp Cinammon Sugar

Method

Sieve flour, baking powder, baking soda and caster sugar together into a large bowl.

In another container, warm the butter until it has melted. Remove from the heat and beat in the milk, orange rind and juice, eggs and vanilla. Mash the banana and stir into the liquid mixture with the blueberries. Tip this mixture onto the dry ingredients and fold together until the dry ingredients are barely damp.

Spray or grease 12 medium-sized muffin pans, Put about 1/4 cup of mixture in each muffin cup. Sprinkle with Cinnamon Sugar. (3 Tbsp or sugar with 3 tsp cinnamon.

Bake at 200 degrees C. for 10-12 minutes or until muffins spring back when pressed in the centre.
