Method

  • Toss the beef in flour, then brown half in a pan, using 1 tbsp olive oil, then spoon into a bowl.
  • Add 100ml red wine to the pan and scrape up any bits. Reduce a little, then pour into bowl with cooked beef.
  • Wipe the pan and repeat with remaining beef and another 100ml wine.
  • Finely chop the onions, carrots and garlic (or use food processor).
  • Add 2tbsp oil to the pan and add the chopped veg, chopped and deseeded peppers, deseeded and sliced chilli, thyme sprigs and bay leaf. Fry for 10 mins.
  • Add the spices, cook for a further 1 min, then add the remainder of the wine, and reduce by half.
  • Add the tomatoes, sugar, beef, winey juices and stock. Season, then simmer for 1.5-2 hours until meat is tender. Stir in the beans and cool.

  • Heat oven to 200C (180C fan) / gas 6

  • Peel and slice the potatoes about 5mm (1/2 cm) thick, then boil for 5 mins. Drain and tip back in pan. Add the butter and thyme leaves, season and mix / toss to coat.
  • Put the beef / chilli mix into a 35 x 25cm dish, then layer the potatoes on top. Dot with butter.
  • Bake for 50-60 mins at 200C (180C fan) / gas 6, until sauce is bubbling and potatoes golden. Serve with soured cream and veg or salad.
  • Can be frozen prior to cooking for 1 month. Defrost fully before cooking.

    • 2 Red peppers
    • 1 Red chilli
    • 2 sprigs Thyme
    • 1 tbsp Thyme leaves
    • 1 Bay leaf
    • 1 tsp Cumin
    • 1 tsp Coriander
    • ½ tsp Cinnamon
    • ½ tsp Chilli flakes
    • 2 400g can chopped tomatoes
    • 2 tsp Caster sugar
    • 250ml Beef stock
    • 1 400g can red kidney beans
    • 1 kg Potatoes
    • 1 tsp Butter

    This is great for cooking up in large quantity, serving up into aluminium (takeaway) dishes and freezing down (when you can't be bothered to cook!)
