Bonfire Night Gingerbread

Method

  • 1.Preheat the oven to 150°C, gas mark 2.
  • 2.Grease and line a 20cm square cake tin
  • 3. Heat the butter in a saucepan with the black treacle, golden syrup and sugar over a low heat, than allow to cool.
  • 4.Sieve the flour with the ginger, cinnamon and bicarbonate of soda into a large mixing bowl, then stir in the oatmeal.
  • 5Make a well in the centre and add the cooled syrup mixture, stirring.
  • 6.Then stir in the beaten egg and mil.
  • 7.Pour into the prepared tin and cook for 1-1¼ hours, until just firm to the touch.
  • 8.Leave in the tin to cool completely.
  • 9.Remove from the tin and cut into pieces.

    • 120g butter
    • 7 tbsp. milk
    • 1 tsp. soda bicarbonate
    • 200g self-raising flour
    • 2½ tsp. ground ginger
    • 1 tsp. ground cinnamon
    • 1 egg beaten
    • 120g oatmeal
    • 110g brown sugar
    • 100g black treacle
    • 220g golden syrup
