Apricot Porridge with Toasted Seeds

Method

  • 1.Place the apricots in a small pan and cover with the juice, bring to the boil and simmer for 5 minutes.
  • 2.Set this aside for 10 minutes then place in a food processor or blender and blend until smooth.
  • 3.Place the oats in a small pan, cover with 600ml (1 pint) water, place over a low heat and cook for 3–4 minutes.
  • 4.Stir through the apricot puree, divide between 2 bowls and top with the toasted seeds.
  • 5.Also delicious if served with blueberries or other fruits

    • 50g (13/4oz) ready-to-eat dried apricots
    • 150ml (1/4 pint) orange or apple juice
    • 50g (13/4oz) porridge oats
    • 15g (1/2oz) mixed seeds toasted
