Heat oil in a large saucepan & gently fry the onion till soft. add curry paste & chilli flakes fry for 2 minutes. add carrots, peppers, coconut milk & stock. season then simmer gently for 15 mins.
Put (in batches) into a food processor & blitz till smooth then taste for seasoning.
Return to a clean pan & add the rice, simmer for 10-15 mins (stirring now & then) or until the rice is cooked.
Serve in bowls or large mugs, scatter chopped corriander on top & naan strips to dip in. Enjoy !
