Method

  • 1.Brush the plums with a little of the butter.
  • 2.Place cut side down in a non-stick frying pan and cook over a medium heat for 2–3 minutes until softened.
  • 3.Remove from the pan.
  • 4.Meanwhile, beat together the rest of the ingredients, including the remaining butter, until smooth.
  • 5.Place 2 plum halves into the pan, spoon over a quarter of the batter mixture and cook for 2 minutes on each side until golden.
  • 6.Repeat with the remaining plums and batter.
  • 7.Serve drizzled with a little maple syrup
  • Ingredients

    • 4 ripe plums halved and stoned
    • 25 g butter or polyunsaturated margarine melted
    • 75 g self-raising flour
    • 1 tbsp. caster sugar
    • 1 egg lightly beaten
    • 250 ml buttermilk
    • to serve a little maple syrup

    These pancakes make a great breakfast if you have guests to stay. You could use other fruit if you prefer.
