Pork Chops with Roasted Pear, Apple and New Potatoes

Method

  • 1.Preheat the oven to 180C/ 350F/gas mark 4.
  • 2.Heat the oil in a frying pan, season the pork chops, add to the pan and fry for 1–2 minutes on each side until golden.
  • 3.Place in an ovenproof dish and add the apple, pear, potatoes and onion.
  • 4.Mix together the orange rind and juice, thyme, mustard and honey and pour over.
  • 5.Cover the dish with foil and bake for 40 minutes, removing the foil halfway through cooking time.
  • 6.Stir through the crème fraîche and serve with vegetables such as green beans and sautéed spinach

    • Very tasty but I tweeked the recipe slightly as I didn't have thyme or creme fraiche and I used Pork Seasoning on the chops. The potatoes were a little under done at the end of the cooking time, next time might leave them out and do jacket potatoes instead.

    • 1 tsp. olive oil
    • 2 lean pork chops each weighing approx 125g (41/2oz)
    • ------ freshly ground black pepper
    • 2 eating apples quartered and cored
    • 1 large pear quartered and cored
    • 200g new potatoes
    • 1 small onion cut into wedges
    • 1 orange(grated rind and juice )
    • 1 tsp. fresh thyme
    • 1 tbsp. wholegrain mustard
    • 2 tsp. runny honey
    • 2 tbsp. light crème fraîche
