1.Preheat the oven to 180C/ 350F/gas mark 4.
2.Heat the oil in a frying pan, season the pork chops, add to the pan and fry for 1–2 minutes on each side until golden.
3.Place in an ovenproof dish and add the apple, pear, potatoes and onion.
4.Mix together the orange rind and juice, thyme, mustard and honey and pour over.
5.Cover the dish with foil and bake for 40 minutes, removing the foil halfway through cooking time.
6.Stir through the crème fraîche and serve with vegetables such as green beans and sautéed spinach
