Method

  • Heat oil over medium-low heat. Add onion and garlic and cook until onion is
  • tender. Add peppers and courgette.
  • Stir in chili powder, cinnamon, coriander, and cumin until coated. Add tomato
  • sauce and 1 cup of water and bring to a boil. Reduce to a simmer, cover, and cook
  • 20 minutes.
  • Stir in spinach and beans. Return to the boil, reduce and simmer for 20 minutes.
  • Add corn and cook for 5 minutes to heat through. Serve with brown rice.

    • Had a good kick to it. I needed to add some corn flour as it was a bit watery and I also left out the cinnamon. My meat eating partner went back for seconds so it can't have been bad!

    • 1 can red kidney beans rinsed
    • 1tbsp Olive oil
    • 1 Medium Red onion Chopped
    • 2 cloves Crushed garlic
    • 1 Chopped green pepper
    • 1 red pepper
    • 1 chopped corgette (optional)
    • 1-½ tsp Chili powder
    • ¾ tsp cinnamon
    • ¾ tsp ground coriander
    • ¾ teaspoon ground cumin
    • 10 ounces chopped spinach
    • 1 package (10 onces) frozen corn kernels
    • 2 cups brown rice
    • 2 cans (8 ounces each) no-salt-added tomato sauce

    Quite spicy. A very adventurous dish!
