    Ingredients

    • 2 tsps olive oil
    • 1-¼ cups brown rice
    • 1 clove minced garlic
    • 1-½ cups carrot juice
    • ¼ cups chopped parsley
    • ¼ tsp pepper
    • 1 cup chopped carrots
    • ½ cup spring onions chopped
    • 1 cup canned chick-peas
    • 1-½ cups green beans cut into 1-inch sections
    • ¾ cup grated parmesan cheese

    Method

    • Heat oil over medium-high heat. Add rice and garlic, and cook for about
      one minute.
      Add carrot juice, parsley, pepper, and 1 cup water and bring to a boil.
      Reduce heat and simmer for 25 minutes.
      Stir in carrots, green beans, chick-peas and spring onions, and cook until
      rice is tender and liquid is absorbed, about 20 minutes.
      Stir in parmesan and serve hot on a bed of fresh, uncooked spinach.
