Vegetable Risotto
Ingredients
- 2 tsps olive oil
- 1-¼ cups brown rice
- 1 clove minced garlic
- 1-½ cups carrot juice
- ¼ cups chopped parsley
- ¼ tsp pepper
- 1 cup chopped carrots
- ½ cup spring onions chopped
- 1 cup canned chick-peas
- 1-½ cups green beans cut into 1-inch sections
- ¾ cup grated parmesan cheese
Method
- Heat oil over medium-high heat. Add rice and garlic, and cook for about
one minute.
Add carrot juice, parsley, pepper, and 1 cup water and bring to a boil.
Reduce heat and simmer for 25 minutes.
Stir in carrots, green beans, chick-peas and spring onions, and cook until
rice is tender and liquid is absorbed, about 20 minutes.
Stir in parmesan and serve hot on a bed of fresh, uncooked spinach.
