Lamb and Lentil Curry (Slimming World)

  • 1. Put the onion and garlic into a saucepan with 100ml of water. Cook for 5 minutes until softened and reduce until almost all the water has gone.
  • 2. Add the all other ingredients like the tomatoes, aubergine, lentils, lamb, turmeric, chilli powder, cumin, coriander, sweetener, lemon juice and 450ml water. Cover and let simmer for 1 hour or until tender and the fluid has been absorbed, give it the occasional stir.
  • 3. Remove from heat and stir in the fresh roughly chopped coriander and half of the yoghurt.
  • Tips

    • Serve with basmati rice or Pita Bread and the remaining Yoghurt.

    • 1 lrg Onion, finely chopped
    • 2 cloves Garlic, crushed
    • 1 med Aubergine, cut in cubes
    • 300g Lean diced lamb
    • 150g Red split lentls, unsoaked
    • 200g Chopped Tomatoes
    • 2 tsp Ground Cumin
    • 1 tsp Ground Tumeric
    • 1 tsp Ground Chilli Powder
    • 1 tsp Ground Coriander
    • 1 tbsp Lemon Juice
    • ½ bunch Fresh Coriander
    • 1 tablet Sweetener
    • 250ml Greek Yoghurt (0% Fat)
    • to taste Salt and Pepper

    This recipe does not use any additional fat otherthan the one from the lamb. Its a very comforting dish, wish I have adapted from a Slimming World Curry Book.
