Broccoli and Stilton Soup

Method

  • Place onion, broccoli and vegetable stock in a saucepan. Bring to boil and simmer for about 15 minutes till vegetables are soft.
  • Blend soup(off heat)
  • Return to pan with milk and cornflour(blended with a little water)
  • Bring to boil, stirring, then simmer gently for a minute or two.
  • Stir in crumbled stilton to suit your taste, same with salt and pepper.
  • Serve with a swirl of cream and Balmoral Bread.

    • I tried this recipe out when my friend was comming for dinner.It went down a treat, even my 13yr old enjoyed it, and thats saying something! Takes little time and is wholesome and delicious.

    • 1lb Broccoli Florets
    • 1 Chopped Onion
    • ¾ pint Vegetable Stock
    • ¾ pint Milk
    • 2 teaspoons Cornflour
    • About 3 oz Stilton Cheese
    • To taste Salt and Pepper
    • A Swirl Cream
