    Ingredients

    • 4 EGGS
    • 2 PEPPERS
    • 2-3 GAMMON STEAKS
    • 1 TOMATOES TIN
    • 1 SALT AND PEPPER
    • 1 HERBS OF YOUR CHOICE
    • 2 GARLIC GLOVES
    • 1 ONION

    Method

    • CHOPPED INTO SMALL PIECES GAMMON, PEPPERS, ONION AND GARLIC.
      LIGHTLY BROWN ONIONS,GARLIC AND GAMMON IN A OVEN
      PROOF FRYING PAN.
      ADD TIN OF TOMOATOES
      ADD PEPPERS, HERB AND SALT AND PEPPER.
      SIMMER GENTLE UNTIL COOKED.

      NEXT CRACK EGGS ON TOP AND PLACE THE FRYING PAN
      IN THE OVEN - 10MIN/OR UNTIL EGGS COOKED.

      SERVE WITH GARLIC BREAD.
      IF YOU DON'T HAVE A OVENPROOF FRYING PAN, SERVE
      WITH SCRAMBLED EGGS.
