French Apple Sponge Cake
Ingredients
- 170g Butter
- 4 Eggs
- 170g Icing sugar
- 60g Apricots jam
- 165g Flour
- ½ packet Baking powder
- at least 4 Apples (Granny)
- 4 tablespoons Calvados (apple liqueur)
Method
- Peel the apples and remove the hearts
Cut them into cubes.
Put the butter, the icing sugar, the calvados and the jam into a big bowl. Beat together with a wooden spoon and add the eggs one by one.
Add the flour, the baking powder and the apples. Beat the mixture.
let the dough stand 30 minutes.
Preheat oven to 210°C.
Grease and line the base of a rectangular cake tin.
Put mixture in the cake tin.
Bake for about 5 minutes at 210°C and then 40 minutes at 150°C.
Take out of the oven and leave to cool before removing form the tin.
This cake is great served with a generous spoon of creme fraiche.

Hi Jade, In France we have baking powder in small packet. 1/2 packet corresponds to 2 tsps.

You should also put some brown sugar and vanilla extract on the apples pieces before adding them to the mixture!

This was wonderful! I was surprised how well the calvados made its presence felt. I'm going to try adapting it with no alcohol and perhaps with other fruit liqueurs brought back from holidays.

I loved it and surprisingly so did my wife (she doesn't usually like apples in things)
She asked if I would make it a regular in my repertoire. I am chief cook and bottle washer as my wife is wheelchair bound.
